  • 500g ground pork sausage
  • 1 red pepper, diced 1/2in thick
  • 1 green pepper, diced 1/2in thick
  • 1/2 yellow onion, diced 1/2in thick
  • 4 cups (about half a loaf) day old bread, torn into 1in pieces
  • 12 Founders & Farmers eggs
  • 1 cup (250g) cottage cheese
  • 1/2 cup 2% milk
  • 1/4 tsp each salt and pepper
  • 1 cup shredded Founders & Farmers cheddar cheese

How to make it

  1. In a large skillet over medium-high heat, brown sausage meat until cooked through, breaking up any large chunks with a wooden spoon or spatula. Drain excess fat and set aside.
  2. In the same pan, over medium heat, sauté the onion & peppers, then add sausage along with the bread back into the pan. Stir to combine & transfer into greased 9x13in baking dish.
  3. Next, whisk together eggs, milk, salt, pepper & cottage cheese & pour over sausage/bread mixture.
  4. Sprinkle with shredded cheese & cover with plastic wrap to refrigerate overnight, You can skip this step & cook the same day, but chilling overnight helps the flavours mingle.
  5. Preheat oven to 375°F.
  6. Remove plastic wrap & cook on centre rack, uncovered, for around 45 minutes or until a toothpick inserted in the centre comes out clean. Let sit for a few minutes before serving.
