  • 2 1/2 cups of pancake mix
  • 2 Cal & Gary's large eggs
  • 2 cups of milk
  • 1/2 cup cooked bacon, chopped
  • 1/2 cup cooked breakfast sausage, chopped
  • 6 Cal & Gary's large eggs
  • Pan spray
  • 1/4 cup Cal & Gary's maple syrup

How to make it

  1. Preheat oven to 400°F
  2. In a large bowl, combine the pancake mix, 2 eggs, milk, bacon and sausage, Mix together until combined.
  3. Spray a Texas size muffin pan with pane spray, and place about 1/4 cup of batter mix into the bottom of the tray.
  4. With a large spoon, make a divot in the batter, and crack an egg into each of the muffins.
  5. Carefully spoon batter on top of each egg, covering it completely.
  6. Bake muffins at 400°F for 20 mins, or until the tops are full and bounce back to the touch.
  7. When the muffins are done, remove them from the tray to a rack and brush liberally with maple syrup.
  8. Let them cool and enjoy!
  9. Leftover muffins can be stored in the fridge and reheated in the microwave for 45 seconds.
