  • 1 package Spolumbo's Sausage
  • 1/2 cup onion, diced
  • 1 cup sliced mushrooms
  • 2 cups bell peppers, sliced
  • 1/2 cup tomato sauce
  • 1 cup polenta or corn meal
  • 3 cups water
  • 1 cup milk
  • 3/4 cup + 2 tbsp parmesan, grated
  • 3 tbsp Cal & Gary's butter
  • 2 tbsp Founders & Farmers canola oil
  • salt and pepper to taste

How to make it

  1. Pre-heat oven to 375°F.
  2. In a medium pot, combine water and milk. Bring to a boil and then slowly add the polenta. Mix well so there are no lumps. Now place on medium-low heat and stir every 5 minutes so that the polenta cooks evenly. It will take about 25-30 minutes.
  3. While you are cooking the polenta, in a large sauté pan, heat oil over high heat. Now add the sausage, cover with the peppers, onions, mushrooms, and tomato sauce (don’t worry about mixing it quite yet). Place sausages into the oven. After about 5 minutes flip the sausage and mix the peppers, onions, mushrooms and tomato sauce. Cook for an additional 5 minutes until the sausage is cooked to 155°F.
  4. Season the polenta with ¾ cup parmesan, butter, salt and pepper.
  5. Now place the polenta in the bottom of a wide mouth bowl. Place the sausages on top of the polenta and spoon the pepper-tomato mixture over the top. Garnish with parmesan and enjoy!
