Toss diced cucumber with salt and let sit for 15 minutes, discard excess liquid. Combine salted cucumbers with remaining salsa ingredients and let marinate while you prepare the turkey/chicken.
In a medium skillet set over medium -high hear with 1 tbsp oil, brown ground chicken or turkey, then set aside
In the same pan, sauté garlic and ginger in oil over medium heat until fragrant and sizzling. Pour in Cal & Gary's Korean BBQ Sauce and stir in ground chicken. Reduce heat and cook until the meat is cooked through and well glazed.
Warm up the tortillas in a skillet or grill and serve with accompanying sides.
