  • 2 flat iron steaks
  • 2-4 lobster claws
  • 1/2 tbsp rosemary, chopped
  • 3 each garlic, minced
  • 1/4 cup oil
  • 1/2 cup butter
  • 2 each garlic cloves, smashed
  • 1 bay leaf
  • 2 tbsp green onions, sliced
  • 1 lemon for squeezing
  • salt and pepper

How to make it

  1. Combine the rosemary, minced garlic and oil in a zip-lock bag. Add the steaks and let marinate for 30 minutes to 1 hour.
  2. Pre-heat grill.
  3. In a pan large enough to hold the lobster claws, place butter, smashed garlic, and bay leaf. Place on a warm part of the grill to melt and infuse the butter.
  4. Remove steaks from the marinade and season with salt and pepper.
  5. Put the steaks onto the grill. Grill steaks to preferred doneness, for medium-rare about 3 minutes per side. Place lobster claws into butter and just warm through. Remove steaks and allow to rest.
  6. Remove the lobster pan from the grill and let the lobster stay warm in the butter.
  7. When the steaks have rested, remove the lobster from the butter and season with lemon juice and green onions. Serve the steaks and poached lobster with a nice white wine and enjoy!
