It benefits from a dry rub or marinade to enhance its flavour, and should be sliced thinly against the grain for the most tender result. Observe the grain carefully since the direction of the grain can change throughout the cut.

Flank steak is a lean and flavourful cut that benefits from a marinade to help tenderize the meat. It's best grilled or pan-seared over high heat and cooked to medium-rare or medium for the most tender result. Be sure to slice thinly against the grain for the most tender and flavourful result.

Top sirloin medallions are a tender and lean cut that is best cooked quickly over high heat. Be sure to let the meat rest for a few minutes after cooking to allow the juices to redistribute and keep the meat tender.
