Ingredients

  • Mini Pumpkin Bites
  • 1 cup Cal & Gary's Butter, Soft
  • 2 cups Demerara Brown Sugar
  • 1 whole Cal & Gary's Egg
  • 1 15 oz can Pumpkin Purée
  • 1/2 cup Sour Cream
  • 2 cups All Purpose Flour
  • 1/2 tsp Salt
  • 1/2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Ground Cloves
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1 tsp Orange Zest
  • 1 tsp Ground Anise
  • Cream Cheese Icing
  • 1/2 cup Cal & Gary's Unsalted Butter, Softened
  • 1 package Philadelphia Cream Cheese, Softened
  • 1 tsp Vanilla
  • 4 cups Icing Sugar
  • Orange Zest
  • 2 tbsp Cal & Gary's Orange Juice

How to Make It

Preheat oven to 325F

In a mixer, cream together, butter and sugar.

Add eggs one at a time and orange zest. Mix until fully incorporated.

Transfer to a bowl and stir in pumpkin and sour cream, blend well

5.

Sift in the flour, baking soda, baking powder, salt, spices. Fold in until combined evenly.

6.

Pour batter into greased mini muffin pans or molds bake in preheated oven for approximately 15-20 minutes. Allow to cool.

8.

In mixer combine soft butter and cream cheese and until creamy (lump free) and well mixed add vanilla, orange zest and juice, salt and icing sugar.

7.

Ice with orange cream cheese icing, garnish with diced cranberries & enjoy!
