  • 4 thick cut pork chops
  • 4 leeks, split length wise and rinsed
  • 1 tbsp oil
  • 6 tbsp sour cream
  • 2 tbsp mayonnaise
  • 3 tbsp chives, sliced
  • 1 tbsp parsley, chopped
  • 1 tsp garlic, minced
  • 1 tsp shallot, minced
  • 1 tbsp white wine vinegar
  • 1/4 tsp ground black peper

How to make it

  1. Preheat grill on high.
  2. In a bowl, combine sour cream, mayonnaise, chives, parsley, garlic, shallots, vinegar and ground pepper. Adjust the seasoning with salt and more vinegar if desired. Set aside for later.
  3. Season pork chops with salt and pepper. Toss leeks with oil, salt and pepper.
  4. Turn the grill down to medium and place the pork and leeks on the grill. Grill the leeks until soft and edges start to char, about 8 minutes. Cook pork until 145F, flipping half way to grill both sides, about 8-12 minutes.
  5. Remove the pork and leeks from the grill. Drizzle the leeks with the creamy chive dressing and enjoy!
