Set a large, heavy skillet over medium-high heat.

Add a drizzle of oil and cook the patties, sprinkling with salt, for 8-10 minutes, or until just cooked through.
3.
Top with cheese and cover with a lid or piece of foil for another minute to allow the cheese to melt.
4.
In a small bowl, stir together the mayonnaise, ketchup and mustard to make a special sauce, and spread the cut side of the buns with it.
5.
Slide the patties onto split buns, and top with your choice of garnishes.
