How to Shuck an Oyster

Shucking oysters might seem intimidating, but with the right technique, it becomes a simple and satisfying skill.

  • What You’ll Need:
    Fresh oysters
  • A sturdy oyster knife
  • A kitchen towel or protective glove
Steps to Shuck:
  1. Prep the oyster: Place it flat side up on a stable surface, using the towel to grip it firmly.
  2. Find the hinge: This is the small, pointed part at the back of the shell where the two halves meet.
  3. Insert the knife: Carefully wiggle the oyster knife into the hinge, applying gentle pressure.
  4. Twist and pop: Rotate the knife slightly to pop the shell open.
  5. Cut the muscle: Run the blade along the top shell to detach the oyster, then slide it under the meat to fully release it.
  6. Inspect and serve: Ensure there are no shell fragments and serve immediately on a bed of crushed ice.

Enjoy with a classic Mignonette Sauce made combining 2 1/2 tbsp finely minced shallots, with 3 tbsp of a good quality red wine vinegar.
