Part Three: Lemon Broccoli Salt

My goodness! Here we are, the grand finale, the end of our journey for the art of whole vegetable cooking of broccoli.

What’s exciting, is there are so many creative ways to utilize the entire broccoli that makes a meal not only delicious, but also helps keep dollars in your pocket.  For me that’s what it’s all about.  There is nothing greater than the feeling of walking into the Calgary Co-op produce section and seeing all those incredible fresh choices. I get inspired with creative ideas and challenge myself to be inventive with cooking each vegetable in a variety of ways: steaming, dehydrating, frying, raw, grilling and fermenting.  When taking these techniques into consideration, there is no reason you can’t utilize all of the vegetable.  There are so many ways to use the stems.

I am completely obsessed with dehydrating. Dehydrating the peel of vegetables is something I have made part of my professional and personal best practices. There are so many uses: a blended mixture you can use for a vegetable stock, dressing, spice blends and just so much more! The flavours are concentrated into a veritable power bomb of deliciousness.

And of course, dehydrating is especially important for making Lemon Broccoli Salt!

Here are a few tricks: it is much easier if you use a Y vegetable peeler and peel the whole lemon avoiding any of the pith (the white bitter part of the lemon).  After you have placed the lemon peels and broccoli stem peels into the dehydrator, dehydrate them until they are dry and crisp.  If you do not have a dehydrator, you can use your oven on the lowest temperature. It’s important to use a non-stick spray on parchment to prevent peels from sticking. After peels are dry and crisp, place into blender with sea salt, and blend until fine. Trust me, this salt is life changing.  I use it on grilled meats, boiled eggs, fish, just about everything. It’s delicious!

And here we are. We’ve taken the journey of utilizing the entire broccoli in three parts from crown to stem. The next time you’re at Calgary Co-op, I encourage and challenge you to utilize your vegetable in a whole, sustainable, and delicious way.
