Most of us are familiar with dried pasta as a basic pantry staple. But if you’ve not tried it, fresh, ready-to-eat pasta is a tender and tasty upgrade.
Fresh pasta retains all its original moisture and tenderness making for a plump noodle and deeper flavour. The taste is wildly different from dried pasta since the ingredients in dried pastas are simplified for a longer shelf life. Fresh pasta typically uses the freshest ingredients in the noodle, and, depending on the variety, it’s also stuffed with fresh ingredients too—you can’t get that from a box! Of course ready-to-eat pastas like Olivieri are also a super speedy supper too.
Now, just because the pasta and even the sauce may already be made doesn’t mean you can’t customize these meals to bring an additional layer of flavour and fun to a quick weeknight meal. Adding extra veggies or herbs or even meat or sausage can turn a basic meal into a feast.

Baked Olivieri Beef Tortellini with Herb Ricotta, Tomato Sauce and Italian Cheese
1 package Olivieri Beef Tortellini (700g)
1 ¼ cup tomato sauce (marinara)
½ cup ricotta
1 tsp fresh oregano, chopped
1 tsp fresh basil, chopped
1 tsp fresh chives, sliced
1 tbsp olive oil
1 ½ cup Italian cheese mix, shredded
salt and pepper
Preheat oven on broil setting.
Place water in a large pot over high heat, bring to a boil and cook tortellini for 1 minute less then recommended on the package.
While water is coming up to a boil, combine ricotta, oregano, basil, chives and olive oil in a bowl. Season with salt and pepper.
In a medium pot warm tomato sauce.
Strain tortellini, then toss tortellini in tomato sauce and place in a casserole dish. Place dollops of the ricotta mix across the pasta and then top with cheese.
Place pasta into oven and cook until golden brown on top, about 2-3 minutes. Serve with garlic bread and enjoy!
