Although the tried and tested traditional meatloaf is always an easy dinner idea, we’re all about creativity and today we’re taking a look at different ways to get creative with your meatloaf. Get creative with meatloaf
Let’s start off nice and simple, by looking at ways you can update the traditional meatloaf in a tin. We all know that a meatloaf is always improved by a good sauce or topping and failsafe classics range from gravy to ketchup to condensed soup (onion and cream of mushroom are staples). Switch it up by adding a glaze to your meatloaf—try a sticky and sweet BBQ glaze or a sharp and tangy tomato jam in place of ketchup. You can put a layer of cheese, from mild mozzarella to strong and tasty English cheddar through the middle of your meatloaf to create a gooey, irresistible centre. How to make a healthier meatloaf
If you’re looking to cut back, slim down your meatloaf by using ground turkey instead of beef and cutting down on the fat content. For anyone keto, try swapping out the breadcrumbs and using shredded zucchini instead - mix in some Italian seasoning and cover with tomato sauce and mozzarella and you’ve got yourself an Italian-inspired dinner.
You can also pack some nutrients into your meatloaf by mixing in plenty of veggies. Finely chop onion, carrot and bell pepper and stir them in to add some vitamins to your dinner.
Think outside the loaf pan
Take your meatloaf out of the loaf pan and get creative. What about using meatloaf as a stuffing for peppers? Simply halve some green bell peppers, spoon some meatloaf inside, sprinkle with cheese and bake in the oven!

Cornbread Crusted Meatloaf Stuffed Peppers
4 each Only Albera Beef Instore Made Homestyle Meatloaf Stuffed Peppers
½ cup flour
¼ cup cornmeal
2 tsp. baking powder
2 eggs, beaten
2 Tbsp. butter, melted
3 Tbsp. shredded Tex-Mex cheese
1 Tbsp. jalapeno, diced canned (optional)
1 bag Little Nugget Potatoes (680 g)
3 Tbsp. butter
¼ cup chives, sliced
salt and pepper
1. Pre-heat oven to 350°F.
2. In a mixing bowl, combine cornmeal, flour, and baking powder.
3. Add the eggs, butter and combine.
4. Fold in the cheese and the jalapenos.
5. Top each meatloaf with the cornbread batter and then place into the oven.
Bake for 25-35 minutes until meatloaf reaches 155°F.
6. If cornbread crust starts to darken cover with foil while the meatloaf finishes cooking.
7. While meatloaf is baking, in a medium pan add the potatoes and cover with cold water.
8. Bring to a boil and then turn down to a simmer.
9. Simmer for about 20 minutes until potatoes are tender.
10. Drain the potatoes, toss with butter, chives, salt and pepper.
11. Remove meatloaf from the oven, serve with chive-buttered potatoes, and BBQ sauce.
