When you’re grilling this summer, you could stick to cooking chicken legs, thighs or breasts, but why not switch it up and try chicken kabobs?
Chicken kabobs (also spelled kebabs) are simply chunks of chicken meat, often cut into cubes and threaded onto metal or wooden skewers and usually grilled. What makes kabobs fun is that you can flavour them in endless ways by marinating the meat first.
There’s no limit to how to marinate chicken for kabobs. You an make a no-work marinade by simply letting the cubed chicken sit in the fridge for a few hours in an Italian dressing. Another classic marinade uses olive oil, soy sauce, honey, garlic, and salt and pepper. If you want to make a middle eastern or Indian-style kabob, you can let the chicken sit covered, overnight in a mixture of plain Greek yogurt, lemon, garlic, paprika, cumin, cinnamon and red pepper flakes.
Of course, it’s very important to cook your chicken kabobs thoroughly to avoid getting sick, so make sure you’ve got a meat thermometer handy. You can cook kabobs in the oven or on the grill, and not surprisingly, grilling imparts that extra layer of flavour (and minimizes clean up!).
You can also find pre-made veggie skewers at your local Calgary Co-op store to save time, and ensure the meal is balanced.

Sweet Chili Glazed Chicken and Veggie Kabobs
4-6 Calgary Co-op Chicken Kabobs
4-6 Calgary Co-op Veggie Kabobs
1/3 cup sweet chili sauce
1 tsp garlic, chopped
4 green onions, sliced
salt and pepper
Pre-heat grill and put on a pot of jasmine rice.
In a bowl mix together sweet chili sauce and garlic. Toss the kabobs with the chili sauce.
Grill kabobs until chicken reaches 165°F and the veggies are tender.
Garnish kabobs with green onions, serve with rice and enjoy!
