What’s for dinner tonight? Sometimes we all feel like just making the same old same old is good enough. But did you know you can grab the ‘same old’ ingredients from your local Calgary Co-op store and still find new and exciting meals to make with them?
This week we’ve crafted a few new recipes that use simple, readily available ingredients like chicken breast fillets, beef stir fry strips and pre-prepped veggies to make some tasty recipes that you can use for a fast weeknight supper, a big feast, or something for your whole family.
Make It Tonight’s options for this week include a tasty traditional Italian Chicken Parmigiana that’s actually much faster than Nona’s recipes. The secret is in the chicken fillets which cook much faster than a whole chicken breast. With all the best Italian seasonings, and a creamy dose of cheese with tangy tomato sauce, plus a side of tasty and crisp asparagus, this is a fast and healthy dinner for busy weeknights.
Need to make a big feast for the family, or are you just looking to make extra to portion out for the freezer? We’ve got you covered with this hearty, herb and spice-rich Beef Pho soup. Pho is a traditional Vietnamese soup that uses plenty of aromatics, and tender pieces of beef in a delicious hearty bone broth. With the addition of onion, fish sauce, ginger, cilantro and fresh vegetables, plus rice noodles, this is a meal that can easily feed a crowd (once we get back to all that) or just freeze the broth for an easy base for lunch or an on-the-go dinner.
Finally this week, for something truly family friendly, nothing says warm and cozy home cooking like a delicious pot pie. With its savoury filling loaded with chicken, vegetables and a hearty gravy, chicken pot pie is a classic dish. With the addition of a crispy, flaky crust on top, it‘s the ultimate family meal for a cold winter night.
To take a pot pie from basic to begging for more, don’t forget to add spices and fresh herbs like thyme or tarragon. Want to go one step further? Brush your pie crust topping with a beaten egg and then sprinkle with cheese. Now that’s a decadent meal!

6 cups beef stock
1 tbsp fish sauce
1 tbsp white sugar
1 4-inch piece fresh ginger
½ yellow onion (large dice)
2 whole cloves
2 whole star anise
1 cinnamon stick
pinch of salt
½ pound rice noodles
½ pound beef stir fry strips
1 cup Thai basil
1 cup bean sprouts
4 scallions (sliced thin on bias)
½ onion sliced paper thin
1 carrot grated
1 lime cut into wedges
sriracha and hoisin for the table
For the Pho stock, add the 6 cups of beef stock to a sauce pot and bring to a slow boil. Add the fish sauce, sugar, ginger, onion and salt. Reduce the heat and simmer. Add the cloves, star anise, and cinnamon stick. Simmer for 30 minutes.
Taste stock and adjust seasoning. Strain the stock and return to sauce pot. Reserve for assembly.
For the assembly:
In a separate pot bring water to a boil. Place rice noodles in water for 30 seconds (or according to package instructions), then strain and distribute between 4 bowls.
Top each bowl with sliced beef, basil, bean sprouts, scallions, and onions. Ladle in enough broth to cover the ingredients in the bowl. Serve with lime wedges sriracha and hoisin.
