Pre-heat oven to 375°F.
Place the Bangers in a hot oven-safe sauté pan and put in the oven.
Bake for 12 – 15 minutes, flipping half way through and cook until 155°F.
In a large sauté pan, heat oil until hot.
Add the Fajita mix, garlic and mushrooms.
Sauté until tender and they start to develop some colour.
Season with chili powder, cumin, salt and pepper.
Remove sausages from the oven, let cool so you can handle them, and slice on the bias.
To build place sausage on tortillas, top with Fajita Mix and garnish with sour cream, cheese, fresh squeezed lime and cilantro leaves.
