Roasted Pork Loin with Garlic Crushed Little Potatoes

Ingredients

  • 2 lbs. pork loin roast
  • 1 medium shallot, minced
  • 5 garlic cloves, minced
  • 6 Tbsp. butter
  • 1 lb. Little Potatoes
  • 2 Tbsp. chives, sliced
  • salt and pepper

How to Make It

1.

Pre-heat oven to 375°F.

Generously season the pork with salt and pepper. Place roast on wire rack in a baking pan and place in oven. You will cook the roast until probe thermometer reaches 140°F, about 40 minutes.

While roast is cooking, put Little Potatoes in a medium pan with cold water. Add a pinch of salt and bring to a low simmer.

Place shallots, garlic, butter and a pinch of salt in a small sauce pan.

Heat on low to cook and infuse butter with garlic and shallots for 5 minutes or until ready to pour onto potatoes.

6.

When potatoes are fork tender, after about 15 minutes, strain and push potatoes with a fork until they split open.

7.

Now season the potatoes with salt & pepper, spoon over the garlic-shallot butter, and top with chives.

8.

Remove pork from the oven and serve with delicious potatoes.
