Preheat oven to 350°F.
Heat an oven proof sauté pan over medium heat.
Add Sunny Brook Cheddar Sausage ring to pan. When just starting to sizzle, transfer to oven and cook for about 15 minutes until reaching 160°F.
While sausage is in the oven, heat oil in a sauté pan over medium-high heat.
Add the onions, and season with salt and pepper. Turn down the heat to medium and cook onions until they caramelize. Make sure to stir onions to cook evenly and not to burn. When onions have a nice tawny colour deglaze the onions with beer and cook until the liquid is almost gone.
While onions are caramelizing, in another large sauté pan, cook the perogies according to the package directions until heated through and lightly browned.
To plate, place a bed of caramelized onions onto a serving platter. Now place the perogies on top of the onions and garnish with the green onions. Serve with sliced sausage and a dollop of sour cream.
