Olivieri Tortellini with Cheese in a Kale-Parmesan Pesto

Ingredients

  • 2 packages Olivieri Tortellini with Cheese
  • 1 bunch kale, de-stemmed and rough chopped
  • ½ cup parmesan, grated
  • parmesan, grated
  • 2 Tbsp. pine nuts, toasted
  • 1 tsp. garlic, chopped
  • ¾ cup olive oil
  • 1 tsp. lemon juice
  • salt and pepper

How to Make It

1.

Put on a pot of water for the tortellini and bring to a boil.

While water is coming up to a boil, place olive oil, lemon juice, kale, parmesan, garlic, and pine nuts into the blender. Blend until comes together to a pesto consistency. Season with salt and pepper.

Add the tortellini to the boiling water and cook according to the package. Drain tortellini, place in a bowl and toss with the pesto.

4.

Garnish with grated parmesan and enjoy!
