Michael’s Sausage Peppers & Potatoes

Ingredients

  • 2 links of Spolumbo’s Spicy Italian or Mild Italian Sausage
  • 1 Tbsp. olive oil
  • 3 large potatoes (cubed)
  • 2 red bell peppers (cut julienne style)
  • 1 cup white onion (roughly chopped)
  • 3 cloves of garlic (chopped fine)
  • ½ tsp. crushed chilies or 1½ tsp chili powder
  • tsp. ground oregano
  • salt & pepper to taste

How to Make It

1.

Bake or barbecue sausages until almost done. Around 25-30 mins at medium grill heat or in a pre-heated oven set to 375°F. Recommend using a meat thermometer – always cook pork or poultry to an internal temperature of 165°F.

Remove from heat and cut into bite-size portions. Set aside.

While sausages are cooking, heat olive oil in a deep fry pan on medium heat and add the cubed potatoes. Cook potatoes around 5 minutes.

Then add peppers, onions and garlic. Cook 10 minutes more, stirring occasionally. Peppers should begin to soften; potatoes will be crispy brown.

Add sausage and simmer for an additional 10 minutes.

6.

Mix in remaining spices one at a time.

Enjoy with your favorite green vegetable such as spinach, brussel sprouts, broccoli or asparagus.
