Mash 4 crushed garlic cloves, 1 tbsp sweet paprika, 1 tbsp olive oil, 1 tbsp red-wine vinegar, 1/2 tsp hot smoked paprika, 1/2 tsp cumin, and 1/4 tsp each salt and pepper in a mortar and pestle or food processor until you have a thick paste.

Rub all over 2 racks of pork ribs, place on a rimmed baking sheet, cover with foil and refrigerate overnight.
3.
Bake at 300˚F for 2 ½ to 3 hours, until very tender. (This can be done up to a day ahead.)
4.
Place on a preheated grill for 10-15 minutes, turning as necessary, until heated through and darkened on the outside.
5.
Cut into individual ribs to serve.
