Preheat the oven to 375˚F.

Set a medium ovenproof skillet over medium-high heat, add a drizzle of oil and cook the sausages until they’re no longer pink.

Add the peppers and cook for 2-3 minutes, until soft.

Chop and stir in any cooked potatoes or other vegetables you like.

In a medium bowl, whisk together the eggs, milk and cheese, saving a handful to sprinkle on top. Season with salt and pepper.

Pour the egg mixture into the skillet and cook for a few minutes, tilting the pan so that the uncooked egg runs underneath as it sets.
