Veggie Slaw with Peanut Sauce

All kinds of veggie spaghetti can be combined to make a tasty slaw—if you like, finely shred some cabbage to add to the mix.

Ingredients

  • Slaw:
  • zucchini, carrot, sweet potato, squash and/or beet spaghetti
  • thinly sliced red, yellow or orange pepper
  • fresh cilantro
  • chopped almonds or peanuts
  • Peanut Sauce:
  • 1/4 cup peanut butter
  • 1 Tbsp soy sauce
  • 1 Tbsp brown sugar or honey
  • 1 Tbsp rice vinegar or lime juice
  • 1 garlic clove, finely crushed
  • 1 tsp grated fresh ginger
  • 1 tsp sesame oil (optional)
  • pinch curry powder (optional)
  • small squirt Sriracha (optional)

How to Make It

  1. Whisk together the ingredients in a small bowl or measuring cup, adding hot water (or coconut milk) to thin to your desired consistency.
  2. Drizzle over your choice of veggie spaghetti and thinly sliced peppers, tossing to coat.
  3. Serve sprinkled with cilantro and chopped almonds or peanuts. Serves as many as you like.
