Veggie Noodle & Kale Slaw

Ingredients

  • 3/4 pkg each zucchini, beet, squash + sweet potato noodles
  • 3 - 4 kale leaves, thinly sliced (discard stems)
  • 1 apple, coarsely grated
  • 1/4 cup toasted sliced or slivered almonds (optional)
  • freshly grated Parmesan cheese (optional)
  • Dressing:
  • 1/3 cup olive oil
  • 2 Tbsp rice or white wine vinegar
  • 2 tsp grainy mustard
  • 1 tsp honey
  • salt and pepper, to taste

How to Make It

  1. In a shallow bowl, combine the veggie noodles, kale and apple.
  2. In a small bowl or jar, shake or whisk together the oil, vinegar, mustard and honey.
  3. Season with salt and pepper.
  4. Drizzle over the salad and toss to coat; sprinkle with almonds and Parmesan (if you like) immediately before serving.
