Place water in a large pot over high heat, bring to a boil and cook tortellini for 1 minute less then recommended on the package.
While water is coming up to a boil, place oil in a wide mouth sauté pan over medium heat.
Add the sausage and cook until browned, then remove sausage and add peppers and onions.
Sauté until peppers and onions starts to colour, about 3-4 minutes. Add garlic and cook for 1 minute.
Now add tomatoes and cook for 1 more minute.
Deglaze with white wine and reduce until wine is almost gone.
Add tomato sauce and stir to combine.Season with salt and pepper.
Add tortellini and parsley, cook for 1 minute to warm pasta.
Place into bowls and serve with a salad.
