Set-up your circulator to 131F (55C).

Season sirloin with salt and pepper.

Place sirloin, 2 tbsp oil, tequila, zest, lime juice, garlic, onion, jalapeno and steams into a sealable bag (vacuum sealer or ziplock bag). Remove air from bag and seal.

Now place sirloin into the water bath and cook for 2 hours.

When sirloin is done cooking, remove from the bag and dry well. Season with salt and pepper

In a heavy cast iron or sauté pan heat on high with 3 tbsp oil, when oil is about to start smoking, add the sirloin and sear on each side quickly. The sirloin is already cooked you just want to develop colour, about 2 minutes per side.

Remove sirloin from the pan, let rest for 3 minutes, slice and garnish with cilantro leaves. Enjoy with a nice Mexican lager or a margarita!
