Souvlaki Chicken Pitas with Tzatziki

  • 4 souvlaki chicken kebabs
  • prepared coleslaw (optional)
  • 2 - 4 soft pitas or naan
  • Tzatziki:
  • 1 mini cucumber, grated
  • 1 garlic clove, crushed
  • 1 cup good quality plain yogurt
  • 1 Tbsp. lemon juice

How to Make It

Preheat your grill to medium-high and grill the kebabs for about 10 minutes, turning often, just until cooked through. (Alternatively, roast on a baking sheet in a preheated 450˚F oven for about 15 minutes.)

Combine the grated cucumber, garlic, yogurt, lemon juice and a big pinch of salt. Spoon some coleslaw (if you like) onto each whole or split pita and top with a grilled chicken skewer and some tzatziki.
