Ingredients

  • 400 g penne pasta
  • 6 oz smoked salmon, flaked
  • 1 Tbsp. olive oil
  • 2 Tbsp. cream cheese, room temperature
  • 1 Tbsp. Greek yogurt
  • 2 Tbsp. capers
  • 1 Tbsp. lemon juice
  • ½ lemon zested
  • 2 Tbsp. dill
  • 1 Tbsp. chives, sliced
  • ½ cup cucumbers, halfmoon slices
  • salt & pepper

How to Make It

1.

Cook penne according to package until tender.

In a bowl, combine cream cheese, yogurt, lemon juice, zest, and olive oil. Work until cream cheese softens into a smooth sauce.

3.

Fold in the salmon, pasta, red onions, capers, dill, chives and cucumbers.

4.

Adjust the seasoning with lemon juice, salt and pepper.
