Pre-heat oven to 425°F

Season the pork with salt and pepper and then place on a rack over a pan.

While oven is pre-heating, in a small bowl, combine the mayonnaise and the garlic and set aside for later.

Now put the pork in the oven and roast for about 25-30 minutes until reaches 140F.

In a medium pan, melt the butter over medium heat. Now add the apples, onions and thyme. Season with a bit of salt. Let the apple cook down and colour a bit, then deglaze with the cider vinegar. When the cider vinegar is almost gone, add the apple juice and turn to low. Let cook on low and stir regularly so it doesn’t scorch.

Remove pork from the oven and let rest for 10 minutes. Now slice into thin beautiful slices, taste and adjust seasoning with salt and a bit of cider vinegar (optional).

To assemble, spread a liberal amount of the garlic mayonnaise on the bottom of each bun, followed by the lettuce and now the sliced pork. Top the pork with the braised apples and finish it with the swiss cheese.
