Roasted Broccoli Pear Salad

Ingredients

  • 3 cups Roasted Broccoli florets, stem removed
  • 2 Pears, cored cut into wedges
  • 1 tbsp Grated fresh ginger
  • 1 whole Lemon, zested and juiced
  • 1/4 cup Sweet onion, fine julienne
  • 2 cups Pecans whole, roasted
  • 3 Whole raqdishes, thinly sliced
  • 2 cups Kale, washed, stem removed and torn into small pieces
  • 2 tbsp Brown sugar
  • 4 tbsp Onion powder
  • 2 tbsp Dried Tarragon
  • 1/8 cup Hot water
  • 1/8 cup Apple cider vinegar
  • 1/2 cup Founders & Farmers olive oil
  • 1 tsp Salt
  • 1 cup Grilled Spolumbo's chicken and red peper sausage
  • 4 tbsp Cal & Gary's maple syrup

How to Make It

1.

Place broccoli florets on parchment lined sheet pan in preheated oven 450F roast for approx 10-12 minutes, remove and set aside.

2.

In mixing bowl add brown sugar, then boiling hot water stir until sugar dissolves.

3.

Add ginger, lemon zest and juice, onion powder, tarragon, garlic purée, vinegar olive oil stir.

4.

Place rest of ingredients except pecans toss together well then add pecans.

5.

Add grilled Spolumbos sausage then drizzle maple syrup toss evenly .

6.

Adjust seasoning & serve
