** Boil the nugget potatoes until tender and roast the mushrooms in the oven until cooked **
In a medium mixing bowl combine the chicken, garlic, paprikas, oregano, cumin, pepper and vinegar.
Now in a medium saucepan heat the oil and add the chicken chorizo. Cook until well browned.
When chicken is cooked, add the onions and peppers and cook until tender. Remove 2-3 tbsp of the mixture from the pan for garnish.
Toss the cheese with the flour. Add the beer to the chicken chorizo mixture. Now add the cheese in four parts, stirring constantly to make sure the cheese melts and incorporates before the next cheese addition. Adjust seasoning with salt, pepper and a few dashes of Tabasco.
Garnish the top of the Queso with the reserved chorizo mixture and 1 tbsp of Cal & Gary’s Salsa.
