Ingredients

  • 4 cups oats (large flake)
  • 1 cup nuts (almonds, walnuts or pecans, flaked or slivered)
  • 1/4 cup seeds (pumpkin, sunflower, flax or sesame)
  • 1/4 cup shredded coconut (optional)
  • 1 tsp cinnamon or pumpkin pie spice
  • pinch salt
  • 1/2 cup brown sugar
  • 1/2 cup pumpkin puree
  • 1/2 cup maple syrup or honey

How to Make It

In a large bowl, toss 4 cups old-fashioned (large flake) oats; 1 cup chopped, flaked or slivered nuts (such as almond, walnuts or pecans); 1/4 cup seeds (such as pumpkin, sunflower, flax or sesame); 1/4 cup shredded coconut (optional); 1 tsp cinnamon or pumpkin pie spice; and a pinch of salt.

In a smaller bowl, whisk together 1/2 cup each brown sugar, pumpkin purée and maple syrup or honey.

Pour over the oat mixture and stir to coat well.

Spread out on a large rimmed baking sheet and bake at 325˚F, stirring twice, for 30 minutes, or until golden and crisp.

Let cool completely, then add 1/2-1 cup dried fruit, if you like.
