Ingredients

  • 2.5 lbs red skin potatoes, peeled
  • salted water
  • 1/2 - 3/4 cup bacon, diced
  • 3/4 cup yellow onions, diced
  • 1/2 cup white wine or light beer
  • mayonaise, to taste
  • salt and pepper, to taste

How to Make It

  1. Cube potatoes and boil in salted water until tender. Drain and set aside.
  2. Chop bacon and onion and sauté until onions are golden and bacon is crispy.
  3. Add wine or beer to pan and bring to a boil. Simmer until most liquid is gone.
  4. Toss the potatoes with bacon/onion mixture then fold in mayonnaise.
  5. Lightly season with salt and pepper.
