Fresh peaches make this classic dessert perfect for the summertime.

Cut or tear 6 slices day-old Udi’s Gluten Free bread into pieces and place in a large bowl with 1-2 sliced peaches.

Whisk together 3 large eggs, 1/2 cup brown sugar, 1 1/2 cups milk and 2 tbsp melted butter and pour over the bread mixture.

Sprinkle with 1 tsp apple pie spice or cinnamon and toss to coat.
4.
Pour into a 2L baking dish and bake at 350˚F for 45 minutes, or until golden and springy to the touch.

Meanwhile, in a heavy saucepan bring 1 cup sugar, 1/4 cup water and 1/4 tsp lemon juice to a boil over medium-high heat.

Cook, swirling the pan occasionally, until it starts to turn golden.
7.
Then stir in 1/2 cup heavy (whipping) cream and 1 tbsp butter—it will spatter and steam—stir until smooth, then stir in a big pinch of sea salt.
8.
Serve over the bread pudding.
