Preheat the oven to 400˚F. Divide the dough into four pieces and roll each out into a rope about 1/2-inch in diameter. Cut each into 4 pieces, roll each on the counter until it’s about 7 inches long, and into a knot, placing on a parchment-lined baking sheet.
In a small bowl, stir together the melted butter, oil, garlic and Italian seasoning. Brush generously over the knots, and sprinkle with Parmesan. Bake for 15 minutes, or until golden. Brush again with the butter mixture as soon as they come out of the oven, and sprinkle with salt.
