A quick easy and delicious make ahead breakfast.
Get your Co op Deli to slice you some pancetta about as thick as regular bacon.
Fry the pancetta until just beginning to crisp, and drain on some paper towel.
Place a slice of cooked pancetta into the bottom of each section of a 6-section large muffin pan.
Crack an egg on top of the pancetta in each section.
Break the yolks if you don’t want it to dribble when you bite it!
Bake at 350F for 12-13 minutes, and then chill directly in the muffin tin.
The next morning, you can pop them out and heat them quickly in the microwave while your English muffin toasts up.
