How to Make It

Rub both with your choice of spice rub, or just sprinkle with salt and pepper, and place the ribs on a rimmed baking sheet, covered with foil. (Line the sheet with foil or parchment first to streamline cleanup.)

Roast for an hour and a half at 300˚F, then remove from the oven, turn the temperature up to 375˚F, and add the chicken to the pan, along with some diced or new potatoes, if you like.

Drizzle the potatoes with oil and return the pan to the oven for half an hour, or until the chicken juices run clear and the joints wiggle easily in their sockets.

If you like, brush both the chicken and ribs with your choice of barbecue sauce for the last ten minutes or so of cooking time.
