Mustard Glazed Grilled Pork Chop with Herb Salad and a German Potato Salad

  • 4 Cal & Gary’s Pork Loin Chops
  • 1.5 + 2 tbsp Dijon mustard
  • 2 lbs little nugget potatoes
  • 3 tbsp apple cider vinegar
  • 3 tbsp green onions, sliced
  • 2 tbsp parsley, chopped
  • 8 bacon strips sliced
  • 1/4 cup red onions, small diced
  • 3 tbsp green onions, bias cut
  • 3 tbsp dill, small sprigs
  • 2 tbsp parsley, picked
  • 2 tbsp basil, pickled small leaves
  • salt and pepper

How to Make It

  1. Pre-heat the grill. 
  2. In a pot cover the potatoes with cold water. Turn onto medium-high heat and bring to a simmer. Simmer for about 15 minutes until tender. 
  3. While potatoes are cooking, in a medium pan cook bacon until crispy and set aside. Make sure to save the bacon fat. 
  4. When potatoes are tender, drain, and lightly brake up with a fork or push through a baking rack.
  5. While still warm season with cider vinegar, bacon, bacon fat, 2 tbsp of Dijon, red onions and season with salt and pepper.
  6. When slightly cooled add 3 tbsp sliced green onions and 2 tbsp chopped parsley.
  7. Rub pork chops with 1.5 tbsp of Dijon mustard and season with salt and pepper.
  8. Place on the grill and cook for 5-8 minutes per side until done. 
  9. Combine the picked parsley, basil, dill and bias-cut green onions.
  10. Spread the herb salad across each pork chop and serve with potato salad. Enjoy!
