Maui Marinated BBQ Ribs with Lemon Caper Pasta Salad

  • 2 racks of pork ribs
  • 1/4 cup soy sauce
  • 3/4 cup canned pineapple, pieces
  • 2 tsp sesame oil
  • 1 inch ginger nub, chopped
  • 4 garlic clovers
  • 6 green onions
  • 2 tbsp lime juice
  • 1 tbsp rice wine vinegar
  • 1/4 cup brown sugar
  • 2 tbsp sesame seeds
  • 2 cups Co-op Lemon Caper Pasta Salad
  • salt and pepper

How to Make It

  1. Pre-heat grill to 325°-350°F.
  2. To make Maui marinade, in a blender put soy sauce, canned pineapple, sesame oil, ginger, garlic, green onions, lime juice, vinegar and brown sugar. Blend until you have a smooth sauce. Set aside any extra pineapple pieces from the can as a garnish for later. 
  3. Remove membrane from the back of the ribs, toss ribs in Maui marinade and sesame seeds. Let marinate for 15 minutes or up to 24 hours. 
  4. Place ribs on a rack over a pan with water. Then place on grill and cook low and slow until ribs are tender. About 2.5-3 hours.
  5. When ribs are tender, turn heat on grill to high to let the ribs caramelize. Garnish with extra pineapple pieces if desired.
  6. When ribs are done, remove from grill and serve with Co-op Lemon Caper Pasta Salad.
