Ingredients

  • 1 Medium Yellow Onion (sliced)
  • 2 lbs Fingerling Potatoes
  • 8 slices Cooked Bacon (diced)
  • 1/3 cup Kimchi Chopped, with juices
  • 2 tbsp Soya Sauce
  • 1 tbsp Mirin
  • 1 tbsp Siracha
  • 1/4 cup Cal & Gary's Korean BBQ Sauce
  • 1/3 cup Mayonnaise
  • 3 tbsp Thinly sliced green onion for garnish
  • 1 Lime, cut into wedges

How to Make It

1.

Place potatoes in a pot, cover with cold water and add generous amount of salt. Bring water to a boil over high heat, then turn down to medium and cook until potatoes are just fork tender. Approx. 15-20 minutes. Drain potatoes in colander and let cool. Once you can handle potatoes cut into halves and quarters.

In a bowl whisk together the mayonnaise, BBQ sauce, sriracha, mirin, soya sauce, and kimchi.

3.

Fold sauce into the potatoes to combine well. Let potatoes come together in the fridge before serving.

4.

To serve place potatoes in a nice bowl and garnish with green onion, bacon and lime wedges.
