Preheat the oven to 450˚F.
Set a heavy skillet over medium-high heat, add a drizzle of oil and cook the sausage until the casing splits and it’s cooked through.
Transfer to a cutting board and slice. (Alternatively, squeeze the sausage out of its casing and cook the meat, breaking it up with a spoon.)
Place the pitas on a large baking sheet, or roll or pat out the pizza dough.
Spread with passata or tomato puree and sprinkle with the sausage, feta and mozzarella.
Bake for 15 minutes, or until bubbly and golden.
