Hoisin Pork & Mushroom Lettuce Wraps

  • 1 lb ground pork
  • 2 cups sliced or quartered mushrooms
  • a few green onions, chopped
  • 1/3 cup hoisin sauce (or to taste)
  • a small handful of cilantro, chopped (optional)
  • sesame oil, for cooking
  • canola or vegetable oil, for cooking
  • chopped peanuts, for serving (optional)
  • small red or green leaf or butter lettuce leaves, for serving

How to Make It

Set a large skillet over medium-high heat. Add a drizzle of canola and sesame oil and cook the pork, breaking up the meat with a spoon, until it’s no longer pink. Add the mushrooms and cook until golden. Add the cilantro and onions to the pan and cook, stirring, until any excess moisture has cooked off. Add the hoisin sauce and stir to heat through.

Serve the mixture in a bowl, topped with peanuts, with lettuce leaves for everyone to fill, wrap, roll and eat.
