Ingredients

  • 1 cup water
  • 1/2 cup butter, cut into pieces
  • 1/4 tsp salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 1/2 cups coarsely grated Gruyère or aged Gouda cheese

How to Make It

1.

Preheat oven to 375°F and spray two baking sheets with nonstick spray or line them with parchment.

2.

In a medium saucepan, bring water and butter to a boil over medium-high heat.

Turn the heat down to low and stir in the flour all at once, stirring until the mixture pulls away from side of pan.

4.

Transfer the mixture to a bowl, let cool slightly and beat in the eggs one at a time, beating well after each addition. The batter should have the consistency of thick pudding.

5.

Stir the cheese into the batter and drop spoonfuls an inch apart on the parchment-lined sheets.

6.

Bake for 25-30 minutes, or until puffed, golden and crisp.
