Grilled Wild Sockeye Salmon with Zucchini Noodles in a Bacon and Sundried Tomato Cream Sauce

Ingredients

  • 4 5 oz wild sockeye salmon
  • 1 tsp + 1 tbsp + 1tbsp olive oil
  • 2 cups Cal & Gary’s Zucchini Noodles
  • 2/3 cup cream cheese
  • 1/4 cup heavy cream
  • 1 tsp lemon juice
  • 3 tbsp basil, chopped
  • 4 sundried tomato, chopped
  • 2 tbsp bacon bits
  • 2 garlic cloves, chopped
  • salt and pepper

How to Make It

  1. Pre-heat grill.
  2. Lightly rub salmon with 1 tsp olive oil and season with salt and pepper.
  3. Toss noodles in a bowl with 1 tbsp of olive oil and season with salt and pepper. 
  4. In a small pot combine cream cheese, cream, 1 tbsp olive oil, lemon juice, garlic and sundried tomatoes. Warm through and season with salt and pepper. Set aside. 
  5. Now grill the salmon. Grill 3-4 minutes on each side until desired doneness.  
  6. When time to assemble, toss the zucchini noodles in the tomato sauce, add the bacon bits and basil. Now make the zucchini noodles into a mound, top with the grilled salmon, and enjoy!
