Grilled Halloumi Peach Salad with Ginger Lime Dressing

Ingredients

  • Dressing
  • cup lime juice
  • ½ Tbsp. ginger, minced
  • ½ tsp. chili flakes
  • 1 Tbsp. Co-op Gold PURE® Honey
  • cup rice wine vinegar
  • ¼ cup vegetable oil
  • Salad
  • 1 cup fennel, thinly shaved
  • 200 g halloumi, cut into ½ inch slices
  • 2 cups fresh peaches, sliced
  • 2 Tbsp. fresh cilantro, leave steams on and rip
  • ¼ tsp. salt
  • tsp. ground black pepper

How to Make It

Preheat grill to high.

Place all dressing ingredients into a blender and blitz on high for 1 minute. Set aside.

Place halloumi slices on hot grill and barbecue each side until dark grill marks appear, about 1 minute per side. Place on a cutting board and cut into strips. Add to a medium size mixing bowl with remaining salad ingredients and stir gently to combine. Dress with desired amount of dressing and serve.
