Pound chicken breasts to an even thickness using a meat hammer and toss them in a large bowl with the hot sauce, oil and fresh pepper. Toss well to coat and let the chicken sit in this marinade until the BBQ is hot.
Your chicken will grill quickly and cook evenly because you pounded each piece, so be ready to turn them after about 2-3 minutes.
Cook to an internal temperature of 165F and top each breast with a sprinkle of blue cheese. Serve with a fresh salad.
