Curried Beef or Pork Fried Rice

  • 1/4 lb. (250 g) thinly sliced Only Alberta Beef or pork
  • 2 cups leftover cooked rice
  • Chopped raw or cooked broccoli, broccolini, Brussels sprouts, cauliflower, carrots or other veggies
  • 1 - 2 tsp. curry paste or powder
  • 2 Tbsp. soy sauce
  • 1/3 cup frozen peas
  • 1 egg, lightly beaten
  • Canola or other vegetable oil, for cooking

How to Make It

Drizzle a generous amount of oil in a large skillet set over medium-high heat and cook the beef, stirring until the strips are just cooked through. Add the rice, veggies and curry powder or paste and soy sauce and cook, stirring to combine everything well and heat it through. Stir in the peas, then push everything aside and crack the egg into the pan; break it up with a spoon and scramble it into the rice mixture, stirring until the egg is cooked and everything is heated through.
