Set a heavy skillet over medium-high heat, add a drizzle of oil and cook the Only Alberta Beef peppercorn burgers for 4-5 minutes per side, covering with a lid or loosely with a piece of foil to help them cook through.

Toward the end of the cooking time, sprinkle the burgers with cumin and salt.

Cook until they’re done to your liking, with crispy, charred edges.

Set aside on a cutting board to rest for a few minutes, then cut in half.

Meanwhile, stir together the tahini, yogurt, lemon juice, garlic and another big pinch of salt. (This sauce can be made up to 3 days ahead and kept in the fridge.) Spread over fresh pita and place the burger pieces on top; sprinkle with chopped tomato, parsley and green onion.
