Ingredients

  • 4 cups oats (large-flake)
  • 4 cups oats (large-flake)
  • 2 cups almonds (sliced)
  • 1 cup coconut (shredded)
  • 1/2 cup peanut butter
  • 1/2 cup liquid honey
  • 1/3 cup brown sugar
  • 1 cup raisins (or other dried fruit)

How to Make It

1.

In a large bowl, stir together 4 cups large-flake oats, 2 cups sliced almonds and 1 cup shredded coconut.

In a small saucepan set over medium heat, combine 1/2 cup peanut butter, 1/2 cup liquid honey, 1/3 cup brown sugar and a pinch of salt; stir until melted and smooth.

Pour over oat mixture and toss until well combined.

4.

Spread the mixture on a large rimmed sheet pan and bake at 325˚F for 30-40 minutes, stirring once or twice, until pale golden.

5.

Cool and stir in a cup of raisins or other dried fruit.

6.

Store in an airtight container or in individual zip-top baggies.
