Heat about an inch of oil in a heavy skillet set over medium-high heat.
When it’s hot but not smoking—a crust of bread or piece of sweet potato should sizzle when dipped in.
Drop in the sweet potato noodles with tongs and cook in batches until crisp, gently moving them around the oil to cook evenly.
Transfer with tongs or a slotted spoon to a paper towel-lined plate and sprinkle with salt. Makes as much as you like.
